Char grilled Cacciatore sausage Salad with Artichoke
Preparation Time: 30-45 minutes
Description: Creative dish, Serves 4
Procedure: Char grilled Cacciatore sausage Salad with Artichoke, Endive, Slow-Cooked Tomatoes and Olive Dressing

INGREDIENTS
2 Quality cacciatore sausage, sliced lengthways
200g Artichokes
2 Shallots, peeled then finely sliced
1 bunch Endive, picked and washed
100g Parmesan cheese, shaved
1 quantity Lemon dressing
1 quantity Olive dressing
1 quantity Slow-cooked tomatoes

Method:
1. Mix endive, artichokes, parmesan, shallots and lemon dressing in a box.

2. Char grill cacciatore sausage on a grill plate [alternatively panfry]. Then toss the char grill cacciatore through the salad,

3. Portion the warm slow-cooked tomatoes on plates. On top of the slow-cooked tomatoes, neatly stack the salad. Then drizzle around the plate with olive oil.

SLOW-COOKED TOMATOES
1 White onion
2 gloves Garlic, finely shaved
500g Ripe tomatoes
1tbsp Tomato paste
Sugar, salt and pepper to taste
10ml Balsamic vinegar

Method:
1. Sauté onions on medium heat for 10 minutes.

2. Add garlic, tomato and tomato paste.

3. Cook for 30 minutes until the sauce is at a nice consistency.

4. Finish with seasoning and Balsamic vinegar.

LEMON DRESSING
40ml Lemon juice
2 Lemon zest
100ml Olive oil
1tsp Dijon mustard

Method:
1. Whisk together lemon juice, zest and Dijon mustard. Slowly add the olive oil. Season.

OLIVE DRESSING
100g Kalamata olives, pitted and chopped
1 Anchovy, chopped
1 glove Garlic, chopped
100ml Olive oil
Small handful of parsley, finely chopped

Method:
1. Bind all ingredients together and season.
